- Organise and prioritise tickets to ensure orders are fired, plated, and sent out in the correct sequence.
- Check every plate for accuracy, presentation, portioning, temperature, and special requests before it leaves the kitchen.
- Coordinate timing across all sections so starters, mains, desserts, and shared items are delivered together where required.
- Communicate clearly with chefs and service staff to resolve delays, missing items, or modifications quickly.
- Maintain standards at the pass, including cleanliness, organisation, and stock of garnishes, sauces, and service items.
- Support quality control by enforcing recipe and plating specifications during peak service.
- Stay calm and decisive under pressure, especially during busy covers, large bookings, and late-night rush periods.
- Who succeeds in this role:
The ideal Expediter / Pass Chef is highly organised, alert, and detail-focused, with strong product knowledge and excellent communication skills. They need a calm, assertive presence, the ability to multitask, and confidence to make quick decisions without losing composure. Success in this role depends on being precise, proactive, and collaborative, with a strong understanding of both kitchen flow and guest expectations.
