The Fry Chef / Friturier is responsible for all fried and crisp-finished menu items within the Kitchen (Back of House), ensuring they are cooked accurately, presented consistently, and served at the correct temperature and quality. This role is essential in maintaining speed, consistency, and product standards during high-volume service in a restaurant, club, or lounge environment.

  • Position in the organisation:

The Fry Chef / Friturier sits within the kitchen brigade and typically works as part of the line team in the Back of House operation. The role reports directly to the Sous Chef or Chef de Partie, and ultimately to the Head Chef / Executive Chef, depending on the size and structure of the venue.

  • Primary purpose of the role:

To produce fried items to exact recipe, portion, and presentation standards while supporting a smooth kitchen flow during service. The Fry Chef helps ensure that dishes leaving the pass are crisp, well-seasoned, and consistent from one order to the next.

  • Key areas of responsibility:
  • Prepare and maintain all fry station mise en place, including batters, breading, garnishes, sauces, and holding containers.
  • Operate fryers safely and efficiently, monitoring oil quality, temperature, and cooking times.
  • Cook menu items such as fries, wings, seafood, vegetables, snacks, and coated proteins according to standard recipes.
  • Coordinate timing with the wider kitchen team to ensure fried items are ready in sync with other components of the dish.
  • Maintain strict food safety, hygiene, and allergen control standards.
  • Keep the station clean, organised, and fully stocked throughout service.
  • Minimise waste, monitor portion control, and support inventory rotation and stock checks.
  • Type of person who succeeds in this role:

A successful Fry Chef is fast, focused, and highly consistent, with strong attention to detail and the ability to perform under pressure. They work well as part of a team, communicate clearly, and take pride in delivering clean, crisp, well-executed food every time. Practical skills, stamina, reliability, and a strong understanding of kitchen safety are essential.
