The Saucier sits within the Kitchen (Back of House) brigade and works closely with line cooks, the chef de partie team, and the wider culinary leadership to support smooth, high-quality service.

  • Reporting line and place in the organisation:

Reports to the Sous Chef, Chef de Cuisine, or Head Chef, depending on the kitchen structure. The Saucier is typically part of a station-based brigade and may collaborate daily with grill, sauté, fish, and expediting teams to coordinate timing and plate consistency.

  • Core responsibilities:
  • Prepare classic and contemporary sauces, reductions, jus, gravies, and pan sauces to recipe and standard.
  • Maintain mise en place for the sauce section, including stocks, garnishes, seasonings, and finishing ingredients.
  • Control flavour, texture, seasoning, temperature, and portioning with precision.
  • Support service by finishing proteins, glazing items, and correcting or reworking sauces as needed.
  • Monitor food safety, sanitation, and proper storage of perishable ingredients.
  • Assist with prep, ordering feedback, and stock rotation to minimise waste and maintain readiness.
  • Work efficiently under pressure while keeping communication clear during busy service periods.
  • What success looks like:
  • Strong technical knowledge of classical sauces and modern kitchen methods.
  • Excellent attention to detail, consistency, and timing.
  • Calm, disciplined, and organised under pressure.
  • Able to follow instructions precisely while also anticipating service needs.
  • A team-oriented professional with pride in presentation, flavour, and standards.

A successful Saucier is both technically skilled and highly reliable, bringing depth of flavour and consistency to every plate while helping the kitchen deliver a polished guest experience.
