The Tournant / Relief Chef is a highly versatile back-of-house team member who steps into multiple kitchen stations as needed to maintain smooth, consistent service. This role is essential to operational continuity, especially during busy periods, staff shortages, special events, or when a station chef is absent. In a restaurant, club, or lounge environment, the Tournant helps protect food quality, timing, and standards by filling gaps wherever support is required.

Within the kitchen hierarchy, the Tournant / Relief Chef sits within the Kitchen (Back of House) team and works across several sections rather than being assigned to one fixed station. The role typically reports to the Sous Chef or Head Chef, and may receive direct instructions from senior section chefs depending on the shift and service needs. Because the position interacts with multiple stations, it plays an important linking role between production, pass execution, and service coordination.

Key responsibilities include:

  • Covering assigned stations such as grill, sauté, pantry, fry, garnish, or prep when scheduled or when coverage is needed
  • Supporting smooth service by stepping in quickly and maintaining speed, accuracy, and presentation standards
  • Preparing menu items according to recipes, portion controls, and plating specifications
  • Monitoring mise en place, stock levels, and station readiness throughout the shift
  • Assisting with prep work, cleaning, closing duties, and basic kitchen organisation
  • Communicating clearly with senior chefs and colleagues to keep service coordinated
  • Upholding food safety, hygiene, and operational standards at all times

The ideal person for this role:

  • Is adaptable, calm under pressure, and comfortable moving between different kitchen sections
  • Learns quickly and can follow established systems with consistency
  • Has solid technical cooking skills and a strong understanding of kitchen operations
  • Works well as part of a team and communicates clearly in a fast-paced environment
  • Takes pride in reliability, flexibility, and maintaining standards regardless of the station assigned

A successful Tournant / Relief Chef is dependable, detail-oriented, and able to contribute immediately wherever the kitchen needs support most.
