The Beverage Manager is responsible for leading all beverage operations to ensure an exceptional guest experience, strong financial performance, and consistent brand standards across the venue. This role sits within the Management & Leadership team and acts as a key link between the bar, floor, kitchen, and senior management. In most operations, the Beverage Manager reports to the General Manager, Operations Manager, or Venue Director, while working closely with the Head Chef, Floor Managers, and purchasing teams to align service, stock control, and commercial goals.

Key responsibilities

  • Oversee beverage operations: Manage all aspects of the beverage program, including alcoholic and non-alcoholic drinks, cocktail execution, wine service, cellar standards, and bar presentation.
  • Drive sales and profitability: Set beverage targets, monitor sales trends, manage gross profit margins, control wastage, and implement pricing and upselling strategies.
  • Lead and develop the team: Recruit, train, schedule, coach, and motivate bar staff and service teams to deliver consistent, high-quality service.
  • Maintain stock and compliance: Control ordering, inventory, stock rotation, and reconciliation; ensure compliance with licensing laws, responsible service of alcohol, and health and safety requirements.
  • Protect standards and guest experience: Ensure drinks are prepared and served to specification, service is efficient during peak trade, and guest issues are resolved professionally.
  • Support innovation and planning: Contribute to seasonal menus, promotions, events, supplier relationships, and beverage activations that enhance the venue’s identity and revenue.

The ideal person

  • A confident leader with strong communication and people management skills
  • Commercially aware, with a sharp eye for cost control and revenue growth
  • Highly organised, calm under pressure, and detail-focused
  • Knowledgeable about spirits, wine, beer, cocktails, and service standards
  • Guest-centric, adaptable, and able to inspire a high-performing team in a fast-paced environment

A successful Beverage Manager combines operational discipline with hospitality flair, ensuring the bar and beverage experience is both profitable and memorable.
