The Expediter / Pass Chef is the critical link between the kitchen and the service team in a high-volume restaurant, club, or lounge. This role ensures every dish leaving the kitchen is accurate, beautifully presented, properly timed, and delivered in sync with the overall pace of service. The Expediter controls the pass, manages communication between chefs and front-of-house staff, and helps maintain consistency during busy, high-pressure service periods.

  • Position in the organisation:

The Expediter / Pass Chef sits at the heart of the Back of House operation, bridging the kitchen and front-of-house teams. The role typically reports to the Head Chef, Sous Chef, or Kitchen Manager, and works closely with section chefs, runners, servers, and bartenders to coordinate smooth service.

  • Key responsibilities:
  • Organise and prioritise tickets to ensure orders are fired, plated, and sent out in the correct sequence.
  • Check every plate for accuracy, presentation, portioning, temperature, and special requests before it leaves the kitchen.
  • Coordinate timing across all sections so starters, mains, desserts, and shared items are delivered together where required.
  • Communicate clearly with chefs and service staff to resolve delays, missing items, or modifications quickly.
  • Maintain standards at the pass, including cleanliness, organisation, and stock of garnishes, sauces, and service items.
  • Support quality control by enforcing recipe and plating specifications during peak service.
  • Stay calm and decisive under pressure, especially during busy covers, large bookings, and late-night rush periods.
  • Who succeeds in this role:

The ideal Expediter / Pass Chef is highly organised, alert, and detail-focused, with strong product knowledge and excellent communication skills. They need a calm, assertive presence, the ability to multitask, and confidence to make quick decisions without losing composure. Success in this role depends on being precise, proactive, and collaborative, with a strong understanding of both kitchen flow and guest expectations.
