The Fish Chef / Poissonnier is the specialist responsible for all fish and seafood preparation, cooking, and presentation within the kitchen. In a premium restaurant, club, or lounge environment, this role ensures that seafood dishes are delivered with precision, consistency, and elegance, supporting the venue’s standards for quality, flavour, and presentation. The Poissonnier plays a vital part in the back-of-house team by maintaining control over one of the most delicate and high-value sections of the menu.

This position sits within the Kitchen (Back of House) and typically reports to the Sous Chef or Head Chef, depending on the structure of the operation. It works closely with other section chefs, the kitchen leadership team, and sometimes the purchasing and receiving team to ensure product quality and availability. Because fish and seafood require specialist handling, the Poissonnier often acts as the subject matter expert for this section of the kitchen.

Key responsibilities include:

  • Preparing, cleaning, filleting, portioning, and storing fish and seafood correctly
  • Cooking seafood dishes to the required recipe, temperature, and service standard
  • Ensuring freshness, proper rotation, and safe handling of all seafood products
  • Maintaining consistency in taste, texture, plating, and portion control
  • Monitoring stock levels, communicating shortages or quality issues, and reducing waste
  • Supporting menu development by contributing ideas for seasonal fish and seafood dishes
  • Working efficiently during service to meet pace, quality, and timing expectations
  • Maintaining strict food safety, hygiene, and sanitation standards at all times

The successful Poissonnier is:

  • Highly skilled in fish fabrication, cooking methods, and seafood product knowledge
  • Calm, focused, and organised under pressure during busy service periods
  • Detail-oriented, with a strong eye for presentation and consistency
  • Reliable, disciplined, and committed to food safety and quality control
  • A strong team player who communicates clearly with the wider kitchen brigade
  • Passionate about premium ingredients, seasonal produce, and culinary standards

In summary, the Fish Chef / Poissonnier is a technical and quality-driven role that demands precision, pace, and pride in craft.
