Position Overview

The Menu Developer / R&D Chef is responsible for creating, testing, refining, and standardizing food offerings that align with the venue’s concept, guest profile, and profitability goals. This role sits within the Kitchen (Back of House) and acts as the creative and technical bridge between culinary innovation and consistent execution. It ensures that menu items are not only exciting and on-brand, but also operationally practical, costed correctly, and deliverable at the required quality every time.

This position typically reports to the Executive Chef, Culinary Director, or Head Chef, and works closely with the kitchen leadership team, purchasing, service management, and sometimes marketing or brand teams during menu launches and seasonal updates. In some venues, the role may also support senior management in shaping the overall food strategy.

Key responsibilities include:

  • Developing new dishes, menu concepts, specials, tasting menus, and seasonal offerings that suit the venue’s identity and customer base.
  • Testing recipes for flavour, texture, presentation, shelf life, and service consistency.
  • Standardizing recipes, portion sizes, plating guidelines, and production methods for smooth back-of-house execution.
  • Calculating and monitoring food cost, yield, and gross profit contribution to ensure menu profitability.
  • Evaluating ingredient availability, supplier options, and preparation efficiency to support scalable service.
  • Training kitchen staff on new dishes, specifications, and quality standards before launch.
  • Reviewing guest feedback, sales performance, and operational results to improve or retire menu items.
  • Supporting menu engineering decisions by balancing signature items, high-margin dishes, and guest favorites.

A successful Menu Developer / R&D Chef is highly creative but also disciplined, commercially aware, and detail-oriented. They combine strong culinary technique with an understanding of cost control, kitchen workflow, and guest expectations. The ideal person is curious, collaborative, and calm under pressure, with the ability to turn ideas into executable dishes that perform well in a fast-paced hospitality environment.
