The Quality Controller in the Kitchen (Back of House) is responsible for ensuring that every dish leaving the kitchen meets the venue’s standards for taste, presentation, portioning, hygiene, and consistency. This role protects the guest experience by identifying issues before food is served and by supporting the kitchen team to maintain a high and reliable level of quality across every service period.

  • Position in the organisation:

The Quality Controller sits within the Back of House kitchen team and works closely with chefs, section cooks, stewards, and the Kitchen Manager or Executive Chef. The role is operationally hands-on and is usually positioned at the pass or final check point before food is sent to the dining area, club floor, or lounge service stations.

  • Reporting line:

This role typically reports to the Sous Chef, Head Chef, or Kitchen Manager, depending on the structure of the venue. It may also coordinate directly with the Executive Chef on standards, recurring quality issues, and service improvements.

  • Key responsibilities:
  • Inspect dishes for correct plating, garnish, portion control, temperature, and overall presentation before release.
  • Check food quality against recipe specifications, brand standards, and guest expectations.
  • Monitor consistency across all sections and services, including peak periods.
  • Identify and communicate defects, incomplete plates, or hygiene concerns immediately.
  • Support corrective action by giving clear feedback to chefs and section cooks.
  • Maintain high standards of cleanliness, food safety, and workstation organization in line with kitchen procedures.
  • Record recurring quality issues and assist with service reviews, training, and continuous improvement.
  • What makes someone successful in this role:

A successful Quality Controller has a sharp eye for detail, strong product knowledge, and the confidence to speak up quickly and professionally. They are calm under pressure, highly organized, and able to make fast decisions without compromising standards. The best performers are respectful team players who uphold discipline, protect the brand reputation, and understand that consistency is essential to guest satisfaction.
