A Sculler plays a vital support role in the Kitchen (Back of House), keeping the dishwashing, cleaning, and equipment-return flow running smoothly so the kitchen can operate efficiently and hygienically. This is a hands-on position that directly supports chefs, stewards, and service teams by ensuring clean crockery, cookware, utensils, and work areas are always available when needed. In a busy restaurant, club, or lounge environment, the Sculler helps maintain speed, order, and sanitation during every service period.

The Sculler is part of the Back of House team and typically sits within the kitchen stewarding or utility function. The role is operational and service-support focused, contributing to the overall cleanliness and readiness of the kitchen and service areas.
- Reporting line:
The Sculler usually reports to the Stewarding Supervisor, Head Steward, Kitchen Supervisor, or Executive Chef, depending on the size and structure of the venue. The role works closely with chefs, stewards, and sometimes front-of-house teams to return clean items promptly and manage waste and breakages responsibly.
- Key responsibilities:
- Wash, rinse, sanitise, and store dishes, glassware, cutlery, pots, pans, and kitchen tools
- Keep dishwashing stations, sinks, drains, floors, and surrounding areas clean and safe
- Sort soiled items efficiently and prioritize urgent kitchen and service needs
- Assist with basic kitchen cleaning tasks, waste disposal, and recycling
- Handle equipment carefully to avoid damage and report breakages or shortages
- Follow hygiene, food safety, and sanitation procedures at all times
- Support the kitchen team during peak service periods with reliability and urgency
- What success looks like:
A strong Sculler is dependable, fast, and physically resilient, with a good eye for cleanliness and organization. They work well under pressure, follow instructions accurately, and understand that consistency and teamwork are essential. The best performers take pride in maintaining high standards, stay calm in a busy environment, and contribute quietly but critically to the smooth running of the entire operation.
