The Vegetable Chef / Entremetier plays a vital supporting role in the kitchen, ensuring all vegetable preparations, starches, soups, egg dishes, and sometimes pasta or grain components are executed to a consistently high standard. This station helps maintain the flow and quality of service by delivering precise, well-seasoned, and beautifully presented accompaniments that complete each dish. In a restaurant, club, or lounge environment, the Entremetier is essential to both banqueting and à la carte operations, where timing, consistency, and coordination are critical.

  • Position in the organisation:

The Vegetable Chef / Entremetier sits within the Kitchen (Back of House) team and is typically part of the hot kitchen brigade. The role reports to the Sous Chef or directly to the Head Chef / Executive Chef, depending on the size and structure of the operation. It works closely with the grill, sauté, fish, and saucier sections to ensure side dishes and accompaniments are ready in sync with the main proteins.

  • Key responsibilities:
  • Prepare, cook, and present vegetables, starches, soups, and related accompaniments to specification.
  • Maintain control of cooking times, seasoning, texture, and plating consistency.
  • Organise mise en place for all assigned items and keep the station clean, stocked, and efficient.
  • Coordinate with other sections to ensure smooth service and accurate order timing.
  • Monitor ingredient quality, freshness, and portion control to reduce waste and uphold standards.
  • Follow all food safety, hygiene, and storage procedures at all times.
  • Assist with menu development, daily specials, and seasonal preparation when required.
  • What makes someone successful in this role:
  • Strong technical cooking skills and a good understanding of vegetable cookery and garnishing.
  • Excellent attention to detail, speed, and consistency under pressure.
  • A disciplined, organised approach with the ability to prioritise during busy service.
  • Good communication and teamwork, especially in high-volume environments.
  • Pride in presentation, cleanliness, and maintaining the standards of a premium kitchen operation.
