The Wok Chef is a specialist kitchen role responsible for preparing high-quality stir-fried and wok-fired dishes with speed, precision, and consistency. This position plays an important part in delivering authentic flavour, strong presentation, and smooth service in a fast-paced restaurant, club, or lounge environment. Because wok service is often a high-volume and high-tempo part of the kitchen, the Wok Chef must balance culinary skill with discipline, organisation, and clear communication.
- Position in the organisation:
The Wok Chef sits within the Kitchen (Back of House) team and is a key member of the hot line or Asian cuisine section. The role typically reports to the Sous Chef, Chef de Partie, or directly to the Head Chef/Kitchen Manager, depending on the structure of the venue.
- Key responsibilities:
- Prepare and cook wok dishes to standard recipes, ensuring consistency in taste, portioning, and presentation.
- Manage a dedicated wok station, including mise en place, equipment readiness, and cleanliness.
- Cook food quickly and accurately during busy service periods while maintaining quality and food safety standards.
- Coordinate with other kitchen sections to ensure timely production and smooth pass flow.
- Monitor ingredient levels, rotation, and freshness, and communicate shortages or issues promptly.
- Support daily prep, stock handling, and proper use of sauces, oils, and garnishes.
- Follow hygiene, sanitation, and workplace safety procedures at all times.
- What success looks like:
A successful Wok Chef is energetic, focused, and highly organised, with strong knife skills, excellent hand-eye coordination, and the ability to work under pressure. They should have a good understanding of Asian cooking techniques, heat control, and flavour balance, as well as the confidence to maintain consistency during peak service. Reliability, teamwork, attention to detail, and a commitment to cleanliness are essential. The best Wok Chefs take pride in speed without compromising standards and contribute positively to a disciplined, professional kitchen culture.
